Weekend Adventure: Fire Kettle Cooking School at Barnsley Resort

Last weekend, Mike and I decided to take a trip to Barnsley Resort. This charming spot is located roughly an hour outside of Atlanta and has activities for everyone!

We chose to check out their Fire Kettle Cooking School. This is an intimate outdoor cooking class with Barnsley Resort’s Executive Chef Nicolas Lebas. In each class (there is one every month), Chef Lebas prepares a favorite recipe over the open flame of a Sea Island Forge fire. Meanwhile, attendees enjoy a salad, the featured dish and a small dessert to finish. The dishes are all perfectly paired with a glass of wine!

During our class, we had the following items:

  • Roasted Beet Salad. Combined with sorrel, charred onions, herb goat cheese custard and a delicious jalapeño vinaigrette.

  • Roasted Broccoli Rabe. Topped with bourbon pecans and a sumac vinaigrette.

  • Chocolate Panettone. Paired with a honey lavender whipped cream.

The class was really fun! Chef Lebas not only taught us the secrets behind his recipes, but also answered the group’s questions on all things food. Following the class, we were all given a recipe card so we could cook the roasted broccoli rabe at home.
